Apple & blueberry pancakes

Gluten free / vegetarian / low FODMAP

Makes 6 mini pancakes

Ingredients

      • 50g spelt flour
      • 2 eggs
      • splash of coconut milk
      • 1/2 tsp baking powder
      • 1tsp cinnamon
      • 1 apple cut into cubes
      • 1 Tbsp flaxseeds
      • Handful blueberries

      Toppings

      • 1/2 Tbsp mixed seeds
      • Handful fresh or frozen strawberries
      • 2 Tbsp coconut yogurt

Method

  1. Combine all the ingredients, apart from the blueberries, in a blender and mix until a smooth consistency
  2.  Heat 1 Tbsp olive oil in a large frying pan
  3. Spoon 2 Tbsp of mixture to make 1 mini pancake, into the hot oil and sprinkle some blueberries in
  4. Cook for 2-3mins each side until cooked through
  5. Serve with the toppings
