Apple & blueberry pancakes
Gluten free / vegetarian / low FODMAP
Makes 6 mini pancakes
Ingredients

- 50g spelt flour
- 2 eggs
- splash of coconut milk
- 1/2 tsp baking powder
- 1tsp cinnamon
- 1 apple cut into cubes
- 1 Tbsp flaxseeds
- Handful blueberries
Toppings
- 1/2 Tbsp mixed seeds
- Handful fresh or frozen strawberries
- 2 Tbsp coconut yogurt

Method
- Combine all the ingredients, apart from the blueberries, in a blender and mix until a smooth consistency
- Heat 1 Tbsp olive oil in a large frying pan
- Spoon 2 Tbsp of mixture to make 1 mini pancake, into the hot oil and sprinkle some blueberries in
- Cook for 2-3mins each side until cooked through
- Serve with the toppings
