Chocolate peanut butter overnight oats

Gluten free / dairy free / low FODMAP

Serves 1

Ingredients

  • 50mls kefir
  • 1/2 cup oats
  • 200mls coconut milk
  • 1 Tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 2 Tbsp. unsweetened peanut butter
  • 1 Tbsp. cacao powder

Optional toppings

  • ½ unripe Banana
  • 1 Tbsp coconut flakes

Method

  1. Blend all the ingredients together and place into a jar.
  2. Leave in the fridge overnight.
  3. Stir through in the morning and serve with the toppings.
