Mexican beans on toast

- 1tbsp Olive oil
- ½ red onion, chopped
- 1 crushed garlic clove
- 1tsp paprika
- 1 tsp crushed chilli flakes
- X1 tin black beans, drained and rinsed
- 1tbsp tomato puree
- 1 tomato, diced
- ½ avocado, diced
- 1tbsp sweet corn
- Juice of ½ lime
- Fresh coriander & Gluten free bread to serve

Method
- Heat the oil in a saucepan and add the onion, garlic, paprika and chilies
- Once onion is soft add the black beans, half the tomato and tomato puree and cook for approx. 5 minutes
- Mix the rest of the tomato, avocado and sweetcorn together in a bowl to make the salsa and squeeze over the lime juice
- Once the beans are cooked serve on top of toasted sourdough or Gluten free bread and top with the salsa and fresh coriander
