Seeded spinach breakfast muffins with smoked salmon

Ingredients
- 4 eggs
- 100g plain full fat yogurt
- 40g soft goats’ cheese
- 30g spinach finely cut
- 10g pumpkin seeds
- 10g sunflower seeds
- 100g smoked salmon
Method
- Pre heat the oven to 180
- Crack the eggs into a bowl and mix in the yogurt, cheese and spinach
- Grease a muffin tray with butter and pour in the mixture. Sprinkle the top of the muffins with the seeds.
- Place in the oven and allow to cook for 20minutes.
- Serve with the salmon on top.
