Seeded spinach breakfast muffins with smoked salmon

  • 4 eggs
  • 100g plain full fat yogurt
  • 40g soft goats’ cheese
  • 30g spinach finely cut
  • 10g pumpkin seeds
  • 10g sunflower seeds
  • 100g smoked salmon


  1. Pre heat the oven to 180
  2. Crack the eggs into a bowl and mix in the yogurt, cheese and spinach
  3. Grease a muffin tray with butter and pour in the mixture. Sprinkle the top of the muffins with the seeds.
  4. Place in the oven and allow to cook for 20minutes.
  5. Serve with the salmon on top.
