Sweet & sour mango chicken

  • 1tbsp olive oil
  • 1 red onion, chopped
  • 1 tbsp ginger
  • 2 chicken breasts, diced
  • 1 tbsp sesame oil
  • 1tbsp white wine vinegar
  • 1tbsp red wine vinegar
  • 1tbsp tamari
  • 1tbsp honey
  • 1/2 head of broccoli cut into florets
  • 1 red bell pepper, diced
  • 1 mango peeled and cubed

To serve

  • Cooked wild rice


  1. Heat the olive oil in a wok or saucepan. Add the onion and the ginger and fry until softened.
  2. Add the chicken to the pan until cooked through.
  3. Meanwhile make the sauce by combining the sesame oil, vinegars, tamari and honey
  4. Add the broccoli and pepper to the chicken and pour over the sauce and the mango
  5. bring to the boil then simmer gently until the broccoli is desired texture
  6. Serve with the rice
