Turkey Lettuce Boats
Gluten free / Dairy Free / Low FODMAP

Serves 3-4
Ingredients
- 1Tbsp coconut oil
- 1/2 Red onion, diced
- 2 cloves garlic, crushed
- 1tsp ginger
- 500g lean turkey mince
- 1 red pepper, diced
- 2Tbsp tamari
- 1tsp sesame oil
- 1tsp fish oil (optional)
- 2tsp white wine vinegar
- salt & pepper
Serving suggestions
- Fresh lettuce leaves
- Feta cheese
- Avocado
Method
- Heat the oil in a large frying pan on a medium heat.
- Add the onion, garlic & ginger and fry until soft.
- Add the turkey and cook until lightly browned.
- Pour over the Tamari, oils and vinegar and stir until combined.
- Add the pepper and cook until everything is combined and cooked through.
- Add salt and pepper to taste and serve in the lettuce leave.
