Vegetable chickpea curry

Ingredients

    • 1tbsp extra virgin olive oil
    • ½ red onion chopped
    • 2 garlic cloves
    • ½ tbsp curry powder
    • ½ tsp turmeric
    • ½ tsp cumin
    • ½ tsp ginger
    • 1 carrot, peeled and sliced
    • 1 parsnip, peeled and sliced
    • 1 ½ cup of whole milk
    • 1 caulifower chopped
    • 1 cup sliced mushrooms
    • 2 handfuls Kale
    • ½ frozen peas
    • 1 cup chickpeas
    • ¼ cup cashew nuts

Method

  1. Heat the oil in a large saucepan and add the onion, garlic, curry powder, turmeric, ginger and cumin.
  2. Add the carrot and parsnip and cook for 5 minutes.
  3. Stir in the milk, cauliflower and mushrooms. Cover the pan and cook for 10 minutes.
  4. Stir in the kale, peas and chickpeas, cover the pan and cook for a further 15 minutes.
  5. Serve with the cashew nuts sprinkled on top.
