Chicken Wrap

Gluten free / dairy free

Serves 2 wraps

Ingredients

  • 1 chicken breast
  • 1 tbsp sesame oil
  • 2 tbsp Tamari
  • 1 tsp  rice vinegar
  • 2 cloves garlic, crushed
  • 1 tsp ginger paste
  • Juice 1⁄2 lime
  • 1 tin black beans
  • 60g shiitake mushrooms, sliced
  • 1 red pepper, sliced
  • 1⁄2 small cucumber, sliced
  • 2 spring onions
  • 1/2 avocado
  • Salad leaves
  • 2 GF wraps

Method

 

  • Prepare the sauce by combining the oil, Tamari, vinegar, garlic, ginger paste, and lime in a bowl. Place the chicken in the bowl ensuring fully covered.
  • Heat oil in a frying pan and once hot add in the chicken
  • fry for around 3-4 minutes each side then add in the pepper and mushrooms. Fry for a further 5 minutes or until cooked through.
  • Add in the black beans and cook until warmed through.
  • Heat up the wrap according to packet instructions. Load the wrap up with the salad, chicken mix, cucumber, avocado and spring onion.
