Chicken Wrap
Gluten free / dairy free
Serves 2 wraps
Ingredients
- 1 chicken breast
- 1 tbsp sesame oil
- 2 tbsp Tamari
- 1 tsp rice vinegar
- 2 cloves garlic, crushed
- 1 tsp ginger paste
- Juice 1⁄2 lime
- 1 tin black beans
- 60g shiitake mushrooms, sliced
- 1 red pepper, sliced
- 1⁄2 small cucumber, sliced
- 2 spring onions
- 1/2 avocado
- Salad leaves
- 2 GF wraps
Method
- Prepare the sauce by combining the oil, Tamari, vinegar, garlic, ginger paste, and lime in a bowl. Place the chicken in the bowl ensuring fully covered.
- Heat oil in a frying pan and once hot add in the chicken
- fry for around 3-4 minutes each side then add in the pepper and mushrooms. Fry for a further 5 minutes or until cooked through.
- Add in the black beans and cook until warmed through.
- Heat up the wrap according to packet instructions. Load the wrap up with the salad, chicken mix, cucumber, avocado and spring onion.
