Courgette curry

Ingredients
- 1 tbsp olive oil
- 1 small red onion, chopped
- 1tbsp paprika
- 1 tbsp cumin
- 1tsp chilli flakes
- salt and pepper
- 1 courgette, chopped
- 1 tin black beans
- 1 tin chopped tomatos
- 4 handfuls kale
Method
- Heat the oil in the pan
- add the onion and spices and cook until softened
- Stir in the courgette, beans and tomato's
- Season to taste and simmer until courgette is cooked through
- Stir in kale until wilted
