Courgette curry

Gluten free / dairy free /  vegetarian

Cooking time 15 minutes

Serves 2

Ingredients

  • 1 tbsp olive oil
  • 1 small red onion, chopped
  • 1tbsp paprika
  • 1 tbsp cumin
  • 1tsp chilli flakes
  • salt and pepper
  • 1 courgette, chopped
  • 1 tin black beans
  • 1 tin chopped tomatos
  • 4 handfuls kale

Method

  1. Heat the oil in the pan
  2. add the onion and spices and cook until softened
  3. Stir in the courgette, beans and tomato's
  4. Season to taste and simmer until courgette is cooked through
  5. Stir in kale until wilted
