Red Lentil Dahl

Gluten free / dairy free / low FODMAP / vegetarian

Serves 3-4

Ingredients

  •  200g red lentils (rinsed)
  • 1 can chopped toms
  • 1 chopped onion
  • 1 red pepper
  • ginger
  • 3 garlic gloves
  • 1tbsp tomato puree
  • 350ml veg stock
  • juice of 1/2 lemon (use the remaining half for serving)
  • 2tsp mild curry powder
  • 2 tsp turmeric
  • 1tsp cumin seeds
  • 1 can coconut milk

Serving options

  • Natural yogurt
  • Fresh coriander
  • Pumpkin and sesame seeds
  • Rice or naan bread

Method

 

  • Heat some olive oil in a saucepan and add in the ingredients simmering for 1 hour
  • Alternatively you can put all ingredients into a slow cooker and heat on low for 8 hours to let all the flavours intensify
