Red Lentil Dahl
Gluten free / dairy free / low FODMAP / vegetarian
Serves 3-4
Ingredients
- 200g red lentils (rinsed)
- 1 can chopped toms
- 1 chopped onion
- 1 red pepper
- ginger
- 3 garlic gloves
- 1tbsp tomato puree
- 350ml veg stock
- juice of 1/2 lemon (use the remaining half for serving)
- 2tsp mild curry powder
- 2 tsp turmeric
- 1tsp cumin seeds
- 1 can coconut milk
Serving options
- Natural yogurt
- Fresh coriander
- Pumpkin and sesame seeds
- Rice or naan bread
Method
- Heat some olive oil in a saucepan and add in the ingredients simmering for 1 hour
- Alternatively you can put all ingredients into a slow cooker and heat on low for 8 hours to let all the flavours intensify
