Spiced Turkey wrap

Gluten free

Serves 1

Cooking time: 15 minutes

Ingredients

  • 1/2 Tbsp olive oil
  • 1/2 small red onion, chopped
  • 1 crushed garlic clove
  • 1tsp paprika
  • 1/2 tsp cumin
  • salt & pepper
  • 100g turkey, diced
  • 1/2 red bell pepper, chopped
  • 1 carrot, grated
  • juice of 1/2 lemon
  • 1 handful baby spinach
  • 1 gluten free wrap
  • 2 tsp greek yogurt

Method

 

  • Heat the oil in a saucepan over a medium heat.
  • Add the onion and spices and cook for approx 2 minutes until onion is soft
  • Add the turkey and cook for approx 5-6 minutes
  • Place the pepper and carrot in the pan and cook until the turkey is cooked through
  • squeeze in the lemon juice and add the spinach until wilted
  • serve in the wrap with the yogurt
