Blueberry crumbles

Gluten free / dairy free /  vegetarian

Ingredients

  • 2 handfuls blueberries
  • 2 Tbsp water
  • 1 Tbsp honey
  • 1 TBSP coconut oil
  • 4 Tbsp oats
  • 1Tbsp coconut flour
  • 1 TBSP ground almonds
  • 1 Tbsp sugar

Method

  1. Heat blueberries in a saucepan with the water and honey until bubbling, slightly mushing them with the back of a spoon.
  2. Meanwhile mix together oil, oats, flour and almonds and sugar.
  3. Divide the blueberries between two ramekins and top with the oat mixture.
  4. Place in the oven for 25minutes until the oats are crisp and golden.
