Chocolate protein pot

Gluten free / dairy free /  vegetarian

Ingredients

  • 100ml coconut milk
  • 30g almond butter
  • 3 tbsp chocolate protein powder
  • 4 pitted dates
  • 2 eggs, separated

Method

  1. Heat the milk, butter, protein powder and dates in a small saucepan
  2. Meanwhile whisk the egg white until peaking
  3. Once the butter has been liquidised transfer to a blender along with the egg yolk and blitz until smooth
  4. Fold in the egg white and then divide the mixture into two ramekins
  5. Chill in the fridge for 2 hours prior to serving
  6. Top with fruit and desiccated coconut
